Optional Add-Ins:

Preparation
- Preheat the oven: Preheat the oven to 360°F (180°C).
- Prepare the quiche pan: Grease a quiche pan with butter to prevent sticking.
- Prepare the pie crust:
- In a large bowl, mix the flour, salt, pepper and olive oil.
- Gradually add ice water until the dough reaches a non-sticky but pliable consistency.
- On a floured work surface, roll out the dough into a circle using a rolling pin.
- Transfer the dough to the greased quiche dish, pressing it firmly into the bottom and up the sides. Crimp or flute the edges and prick the crust with a fork.
- Bake for 10-15 minutes until lightly golden.
- Increase oven temperature: Raise the oven temperature to 425°F (220°C) after removing the quiche crust.
- Prepare the stuffing:
- In a pan over low heat, sauté the onion until translucent, then add the spinach for an additional two minutes. Set aside.
- Sauté the remaining vegetables separately, seasoning with salt, until tender. Set aside.
- Prepare the filling:
- In a mixing bowl, beat the eggs with the yogurt (or alternative) until well combined. Season with salt and pepper.
- Stir in all the sautéed vegetables (except cherry tomatoes) until evenly distributed.
- Assemble and bake:
- Pour the quiche filling into the prebaked crust.
- Arrange the cherry tomatoes on top and sprinkle with grated cheese if desired.
- Bake in the oven for 25 minutes or until the filling is set. During the last five minutes, switch to broil mode to brown the crust.
- Serve: Once baked, allow the quiche to cool slightly before slicing and serving.
