Whether you’re a seasoned home chef or just starting your culinary journey, this recipe promises simplicity without compromising taste. We’ll explore one combination of toppings and sauce; however, all of these are interchangeable to your liking. This makes the poke bowl one of the most versatile dishes. Ingredients:
- 2 cups of jasmine rice
- 2 avocados
- 1 cucumber
- 1 pound of salmon
- 1 green onion
- Teriyaki sauce
- Soy sauce
- Salt and pepper
- Sesame seeds
Optional add-ins/replacements:
- 1 can of corn
- 1 package of frozen edamame
- Seaweed wakame
- Protein replacements include a block of tofu, 1 pound of chicken breast, 1 pound of beef.
Preparation:
- Place the salmon filet in a medium-sized bowl and season with salt, pepper and teriyaki sauce. Massage the sauce into the filet until it is fully covered.
- Cover the bowl with plastic wrap and place it into the refrigerator for 30-90 minutes. The longer it remains in the fridge, the more flavorful it will be.
- While the salmon is marinating, cut your avocado and cucumber into bite-sized pieces using a large cutting knife.
- To prepare the green onion, remove the white ends and thinly slice the green portion of the onion using circular motions.
- Put the toppings into separate bowls and place them in the fridge.
- Preheat the oven to 400°F.
- Place the marinated salmon on a baking sheet and cook in the oven for 20-25 minutes at 400°F.
- While the salmon cooks in the oven, rinse two cups of jasmine rice until the water runs clear.
- Combine rice with 2.5 cups of water in a pot with a pinch of salt.
- Bring rice to a boil, turn down the heat and let the rice simmer for 10-15 minutes until all water is absorbed, then remove from heat.
- Take the salmon out of the oven and remove the skin from the bottom of the filets.
- Serve rice in a bowl with salmon and diced toppings. Add green onions, sesame seeds and soy/teriyaki sauces to your liking.

Salmon can easily be replaced with tofu, chicken or red meat, which can all be marinated in teriyaki or soy sauce.
