Ingredients:
- 1 block of extra firm tofu
- 4 whole potatoes
- 5 carrots
- 2 eggs
- 100g Boursin cheese
- 1 cup bread crumbs
- 1/2 cup of chicken broth
- Salt and pepper
- Garlic powder
- Olive oil (for roasting and frying)
- Optional: Milk
Preparation:
- Prepare the tofu
- Drain the tofu and press it to remove excess moisture. Cut the tofu into slices or cubes, depending on your preference.
- Season the tofu with salt, pepper and garlic powder.
- Bread the tofu
- In a small bowl, whisk the eggs.
- Place the bread crumbs in a separate shallow dish.
- Dip each tofu piece into the egg mixture, then coat it evenly with the bread crumbs. Set aside.
- Prepare and boil the potatoes
- Cut the potatoes into halves or quarters depending on the size of the potato.
- b. Place the potatoes in a large pot of salted water and bring to a boil. Cook for 15-20 minutes or until tender when pierced with a fork.
- Drain and set aside.
- Roast the carrots
- Preheat the oven to 400°F (200°C).
