As the days start to get warmer, I naturally begin craving meals that feel lighter, fresher and easier to put together. A good summer salad is one of those dishes that never disappoints. This recipe brings together fresh greens, creamy avocado, smoky salmon and crunchy pita chips for a meal that is both refreshing and satisfying.
What I love most about this salad is how versatile and easy to adapt it is. Depending on what you have in your kitchen, grilled chicken or shrimp would work just as well in place of the salmon, and you can experiment with different nuts or greens to make it your own.
Ingredients
- Mixed greens
- 6 slices of smoked salmon (about 100g)
- Cream cheese balls coated in chopped pistachios or any nut of your choice ● 1 sliced avocado
- Pita chips
For the Mustard Dressing
- 1/2 cup olive oil
- Juice of 2 small lemons
- 1 tablespoon of whole grain mustard
- 1 tablespoon of honey
- Salt and pepper (to taste)
Recipe:
To make the dressing, whisk together the olive oil, lemon juice, mustard, honey, salt and pepper until the mixture is emulsified.
Arrange the mixed greens on a plate or in a large bowl, then add the smoked salmon, avocado and cream cheese balls. Top with pita chips for extra crunch, and finish by drizzling the dressing over everything just before serving.
